    post processing is using photoshop to correct or manipulate your images.

    As I see in video the metering indicator on your camera appears only in Manual Mode. On my camera it appears all the time so in Aperture Mode camera of course selects that shutter speed which makes indicator to be on zero but I can still change it and it will move to – or +. The same is in Shutter Speed Mode. I can change aperture without EV.

    You can still change shutter speed while in aperture mode, cannot you? You don’t have to adjust EV down or up. If you rotate the button which changes shutter speed in manual mode it will change it in aperture mode as well.
